Sulfites in foods?
I see sulfites in many foods. Are they harmful, and if so, why?

Sulfites are additives used as preservatives to help foods last longer and stay fresh. They are safe for most people in small amounts. However, for some people with sensitivities or allergies, sulfites can cause reactions ranging from mild (headache, itching, skin redness) to severe (breathing problems in asthmatics).

Foods are added as preservatives to help them maintain their freshness, color and taste for a long time. For most people, they are completely safe and have no problem. If you know that you have sensitivity to sulfytes, it's important to read the food label carefully and whenever possible, choose the option without these additives. This is particularly important when buying alcohol, dried fruits, or canned goods. For everyone else, sodium sulfite is a convenient way to expand the shelf life of foods and preserve their taste and color.
